A lot of cuisines around the world have a version of potato flatbreads; the Nordics are no exception. These Norwegian speltlomper are made from fluffy potatoes mashed and mixed with spelt flour before being cooked on a dry griddle pan. The speltlomper are topped with creamy homemade ricotta, and red onions caramelised with birch syrup. The cherry tomatoes are roasted with garlic cloves and thyme. The dish is then finished with a drizzle of fragrant dill oil. 

 

A portion is two speltlomper with toppings.

 

Heating instructions

The speltlomper, caramelised onions and tomatoes can all be heated in the packaging it arrives in. Heat in a preheated 180 degree celcius oven for 20 minutes. Once heated top with the ricotta and drizzle with the dill oil.
