Swedish semla is a tasty February treat that is normally eaten on and around Shrove Tuesday. This beautiful cream bun is also enjoyed in Finland (laskiaispulla), Norway (fastelavnsbolle) and Estonia (vastlakukkel)
The cardamom-spiced wheat bun is proved and baked before having the top cut off once cooled. Some of the inside of the bun is scooped out, mixed with milk and almond paste and then used to fill the bun again. The filling is topped with whipped cream before the cut-off top is popped back as a jaunty lid and is dusted with powdered sugar.
Whilst the original Swedish version comes with almond paste only, the other countries also offer another version where the almond paste is replaced with strawberry or raspberry jam.
Because we like to offer as many Nordic treats as possible we will be selling three different versions:
- finest Danish marzipan topped with vanilla whipped cream
- homemade raspberry jam topped with vanilla whipped cream
-homemade lemon curd topped with lemon elderflower whipped cream
